Lemon-Dried Blueberry Biscotti
These lemon biscotti are full of Michigan dried blueberries and the flavor combination is out of this world. Baked biscotti are drizzled with a decadent French white chocolate.
Chef Perry Harmon of Way North Foods in Traverse, Michigan makes very unique biscotti. What sets his biscotti apart from all others is that even though they are twice baked, they are baked just long enough to have a pleasing crunch yet still be somewhat soft in the center. As soon as you bite into one of the biscotti the luscious flavors from northern Michigan and beyond burst into your mouth. The biscotti are hand-formed and have an attractive rustic look to them. Chef Perry prides himself on using as many local ingredients as possible in his products. He buys from local suppliers. Cherry Central in Traverse City supplies dried cherries, cranberries and blueberries; and Old's Brothers supplies maple syrup and maple sugar. All of the biscotti are made with natural ingredients such as creamery butter, pure cane sugar and choice local fruits.

Way North Foods
Chef Perry Harmon and his wife honeymooned in Paris, France and it was there in the City of Lights that Perry felt the desire to become a chef. Upon returning to the states he enrolled in and completed culinary school and an apprenticeship program through the American Culinary Federation.
